Pomegranate & Burgul Salad

Pomegranate Salad

I invited my family over for dinner and I wanted to prepare something fresh for that hot august day. I started looking for options in the internet and I found this salad in #foodandwine web page.

It is easy to prepare and it has a super special mix of mediterranean flavours.

Ingredients:

1 ½  cup of bulgur

1 pomegranate

1 tbsp fresh lemon juice

2 tbsp honey

1 garlic clove

Pinch of cinnamon

¼ cup olive oil

Salt & Pepper 

1 cup chopped parsley

½  cup chopped mint

3 tbsp pistachios

Instructions: 

1. Cook the Bulgur for 15 minutes in salty boiling water. Drain and let it cool. 

2. In a small bowl for the dressing put the lemon juice, cinnamon, garlic and honey. You can put 1tbsp of the pomegranate juice. Mix it with the oil and season with salt & pepper.

3. In a medium bowl put together the bulgur, parsley, mint, lemon and the pomegranate seeds. Toss the dressing. Add more salt & pepper. Transfer to the bowl for serving and top with the pistachios. Add some parsley and mint on top for cuteness.

Serves: 4-6
